Omelet with potatoes

Good evening everyone, today I'm sharing a recipe for potato omelet. Omelets aren't my favorite food, but I like to make them occasionally to vary my lunch. Although I've always tried to make them super thick like a Spanish omelet, I never manage it, and they're really hard to flip, especially in my pans, which I recently ruined while cleaning them, and now things stick to them, haha. Anyway, in my case, I add several ingredients to the omelet, including tomato and bell peppers. Sometimes I also add ham and yellow cheese; I really love it that way.

For this recipe, I used 3 eggs. I beat them with a mixer for the first time, thinking it would make the omelet super fluffy. I usually beat it with a fork. I tried to make the eggs frothy, thinking that would be the magic secret to a super fluffy omelet. Then I diced the tomato and added it to the mixture. I also diced the bell pepper, but I didn't add it to the mixture yet.

Then I sliced the potato very thinly and sautéed it in the pan with the bell pepper. I also seasoned it with a little salt, as well as the tortilla mixture, to which I added salt, pepper, ground oregano, and garlic sauce. I added everything that had been sautéed to the mixture and also wanted to add pieces of ham. I heated the pan with a drizzle of oil and poured in the mixture, letting it cook for a few minutes over low heat.

Turning it over is difficult, even though it's a small pan (which is the one where things stick the least). Luckily, this time I didn't make as many mistakes when turning it over. I let it cook on the other side until it was golden brown. Finally, I took it out of the pan and cut it into 3 pieces since obviously my husband, my son, and I were going to eat it.

The potato omelet is quite simple but a very good option to eat for breakfast, lunch and even dinner.
