The Tomato Mince

Ground beef with tomato sauce is a classic, although I reached a point where I got bored with it. But I’m gradually learning to make it taste a little different, and now I can say I like it again. It’s a really good and versatile lunch that you can eat with rice, pasta, vegetables, or even pita bread—which I love. Today I made ground beef, and I wanted to share with you how I prepare it these days. I used to make it with potatoes and carrots, but one day I wanted to make it without those vegetables and have the sauce come out really thick and rich—since my mom had made one just like that for us in December when she was visiting, and I really loved it. So I was dying to make it the same way—or at least something similar— That’s how, little by little, I learned to make it better. I also switched up the tomato paste I usually use—the one I’m buying right now is a brand called Capri, and it’s fantastic; it’s super rich.

I used to chop the vegetables into small cubes (garlic, onion, tomato, bell pepper), but my son would always pick them out, so I decided to start blending these ingredients, and he loves the taste of the meat (if only he knew it has everything he doesn’t like, hahaha). I blended it with a little water and set it aside in a separate container, then I heated up my skillet with a splash of oil, and once it was hot, I added paprika to give it color and flavor.

Then I added the ground beef and started stirring until it was fully browned, and of course I seasoned it to taste—I added garlic sauce, Worcestershire sauce, salt, pepper, ground oregano, and adobo seasoning. Then I started adding the mixture of tomatoes, paprika, red onion, and two heads of garlic. I let it cook until the liquid reduced a bit.

Then add two tablespoons of this tomato paste—it’s divine and super thick. The meat took on a beautiful, almost red color. Let it cook for another 15 minutes over low heat, stirring occasionally. I like to leave it with plenty of sauce; I don’t like the meat to be completely dry.

I served this delicious meat with short pasta, béchamel sauce, and fried plantains. This is one of our favorite dishes, and I hadn't made it in a very long time because I'm currently trying to vary my diet, but today I wanted to make a small exception, and it was really worth it.
