Easy Hard Apple Cider

I picked up a 1 gallon jug of organic unfiltered apple juice from my local Central Market, and some Red Star bread yeast (I do have wine yeast, but wanted to go "inmate brew" style with this one, and wanted a yeast that would eat less sugar), and made some hard apple cider. (c.2012)
