ขนมจีนเป็นอาหารคาวชนิดหนึ่ง ทำด้วยแป้งเป็นเส้นกลม ๆ คล้าย เส้นหมี่ กินกับน้ำยา น้ำพริก เป็นต้น อาหารชนิดนี้ ภาษาเหนือ เรียก "ขนมเส้น" ภาษาอีสาน เรียก "ข้าวปุ้น" และ ภาคใต้ เรียก "หนมจีน"
