Hi guys n gals
So here it is.... my recipe for my lamb curry.
Ingredients:
-Oil(just enough to braise food)
-Onion(half or whole...diced/sliced)
-2 or 3 chillies(sliced in half*optional)
-Masala(I use 2 to 3 tablespoons....but u can use as much as you need or like...curry does not have to be too hot but I do like mine red aswell - I use either Osmans Durban Masala or Osmans Kashmiri Masala)
-Salt
-Curry Leafs(about 2 sticks ...rinsed)
-Dhaniya or coriander(about a palmful,break in pieces...rinsed)
-1 Tray of Lamb(cut in pieces and rinsed...when finished rinsing,leave a little water... so that when braising, masala doesnt get burnt)
-4 to 5 Potatoes(cut in halves)
-1/2 tablespoon of Garlic & Ginger paste
-Water

Instructions:
-Put the oil in the pot and add your onions...let it fry till a little brown.20180218_123810.jpg
-Next put in your Masala and mix...let it fry just a little(dont fry it too much..it must not get burnt otherwise your whole curry is spoilt...same goes for onions)20180218_123900.jpg

    -Add in your chillies(chillies are optional
    -Add Water(just enough to cover meat)
    -Put in your curry leaves.
    -Mix together and cover pot 3quarter way with lid.
    -Mix food at intervals.
    -When water is almost finished in pot, put in your potatoes.20180218_132845.jpg
    -Next add in water(just enough almost covering potatoes).
  • Next add in the salt(I put a little less salt when cooking...if anyone wants more salt they add- health reasons)and cover pot.
    -Mix food at regular intervals(do not overmix...potatoes must not break)
    -When potatoes are cooked and gravy is a little thick(must not be waterish)add in the Dhaniya and cover pot,put stove off.20180218_142015.jpg
    Food is ready to serve in 5minutes.
    Best served with Roti.

This is cooked for 4 people...so ofcourse you have to adjust the quantity of ingredients depending on the number of people you cooking for.

Tip: For your potatoes to cook quick and perfect...pierce them after you cut them in halves, so that the gravy soaks in through the potatoes....they come out soft and cooked perfectly on the inside aswell.

Braise food on low heat, then when you finish adding your meat, put stove on a higher heat.
