Pumpkin Turkey Curry Recipe
In my family, we like pumpkin in savory and spicy dishes. This one is fragrant and spicy. Add more chili if you like it hot.
Pumpkin Turkey Curry Recipe
Ingredients
• 1 Hokkaido pumpkin, not too big, Cut into small cubes
• 2 tablespoons oil (we like to use butter)
• 1 pound ground turkey (my sons prefer this)
• 2 large onions chopped fine
• 4 garlic cloves minced
• 1 dried chili chopped fine
• 1 piece of ginger, about 2 inches in size, minced finely
• 1 teaspoon ground turmeric
• 2 red or green bell peppers (whatever is in the garden) chopped
• 1 cup chicken stock (homemade if possible)
• 1 can coconut milk (about 1 ¾ cups)
• 1 small can coconut cream (for added creaminess)
• 1 bunch of scallions chopped
• salt and pepper to taste
Instructions
1. Melt butter (oil) in a pan. Chop onions and begin to fry.
2. Mince up the garlic and the ginger. Place in with onions.
3. Cut up the peppers and add to the pan.
4. Add the ground turkey and stir until no longer pink.
5. Add salt and pepper.
6. Add the small cubes of pumpkin, chicken stock and coconut milk.
7. Let cook about 5 minutes.
8. Add the coconut cream, bring to a boil and let cook for about 15 minutes
or until the pumpkin cubes are tender.
9. Add the chopped scallions and cook for another 2 minutes.
10. Serve hot with rice

Totaly in love with this recipe and i most definitely will try this out.
Its hard to find ground Turkey here in the Philippines, so maybe i will use beef! And also substitute the chicken stop with that of beef?
Or just use finely chopped chicken.

You can use finely chopped chicken. It tastes just as good. A friend has made it with ground pork and says it was really good. Let me know how you like it.

My mom started cooking this and I just continued the tradition. It probably originated in India. They use a lot of curries. My mom was of English descent and her ancestors were with the British colonial army when India was a colony of England. They would have brought the recipes back with them.
I would really try this! We dont get much in the way of curry here it seems!

Pumpkin and turkey were 2 different things that never cross my mind to mix them together to make a curry dish, something new worth trying, thanks for sharing @cecicastor!
This recipe looks amazing! And I bet is tastes amazing too. Is it possible to avoid using cream? I'm not much into butter or any cream, maybe cause in Italian cuisine there is not much use of it @cecicastor
The coconut cream just adds coconut flavor. It is not the same as a dairy cream which I can not eat. My family eats the butter. I often substitute coconut oil or avocado oil in my cooking.

It is and it is easy to make too. It tastes amazing the second day but I don't very often get enough left over for second-day lunch! 🤭
Here we can buy two different types of coconut cream. One is sweetened the other isn't. If you find it too sweet, just leave the cream out and add more spice.

My hubby used to add extra hot peppers to his, usually habanero!
Curry is good for what ails you! Warms the insides and is a comfort food!
Why not? It is easy to make and you can add or subtract as much heat as you like! Homemade is so much better than what you can get in a restaurant...

I like the taste of habaneros, just not as much as hubby did. If I eat a quarter of one I am doing well. He would eat two or three whole! LOL

Use broccoli for the rice add a few mushroom, asparagus then add full fat cheese.. yummy :)

oemgeee i was looking for a recipe like this! i have a lot of pumpkin puree left from last year frozen. how many cups would you say the small pumpkin produces? thank you for this!
im going to use tofu instead of turkey
Tofu works well if you toss in cornstarch first and fry it with some spices. Otherwise it is soggy. About two cups of frozen pumpkin should work out okay.
