In the kitchen it is often said that a person has good or bad seasoning to define the quality of their meals in terms of flavor, textures, aromas and presentation.

For me it is simply having or not having basic knowledge, either through studies carried out or through experience gained through years of practice in the kitchen.
.
The chemistry of food, currently little or almost nothing is explained about this; I remember that the first time I studied Culinary Arts, that subject was the main one, since as the trimesters progressed, this subject was incorporated into the classroom of each subject as a complement and guide for each dish to be prepared, be it soups, meats, stews, vegetables desserts, cocktails etc.

Spices make up most of the composition of flavors in the kitchen, in my case they are my greatest allies, since I like to combine flavors, play with spices, vegetables and much more....

En la cocina se suele decir que una persona tienen buena o mala sazón para definir la calidad de sus comidas en cuanto a sabor, texturas, aromas y presentación.
.
Para mi simplemente es Tener o no Tener Conocimientos Básicos, bien sea por estudios realizados o por experiencia adquirida con los años de practica en la cocina.
.
La química de los alimentos, actualmente se suele explicar poco o casi nada sobre esto; recuerdo que la primera vez que estudie Artes Culinarias esa materia era la Principal ya que a medida que se avanzaba en los trimestre esa materia se incorporaba en el aula de cada materia como complemento y guía de cada plato a preparar, bien sea sopas, carnes, guisos, verduras postres, cócteles etc.

Las especias forman la mayor parte de la composición de sabores en la cocina,en mi caso ellas son mis mas grandes aliadas, ya que me gusta combinar sabores, jugar con las especias, verduras y mucho mas....

I have seen this subject several times and the first time I was a teenager and the second time was 5 years ago when I studied for Culinary Master, and the truth is that everything I learned from my adolescence keeps that record of flavors from the first time I I studied it, my teachers really knew what food chemistry meant and they taught me several techniques, I will try to transmit them to you through each page or story that I tell you about my cooking and my favorite dishes.

I am not going to talk about the chemical processes but about the harmony of flavors, the union between two or more ingredients, even if they are opposite, because when combined in the right amount they make a chemical process that your palate appreciates and that makes you exclaim Hum mm,! What Ricooo!

Let's talk a little about spices, according to wikipedia (I quote verbatim) a spice is considered to be the hard parts, such as seeds or bark, of certain aromatic plants, but by similarity, often the fragrant leaves of some herbaceous plants are also included, whose culinary name is herbs. Most of the spices can be considered native to the tropical regions of Asia, and the Moluccas Islands in Indonesia, also known as the Spice Islands, although some were found in the Mediterranean such as anise, mustard.
Today we use the same spices that were used in ancient times.

He visto esta materia varias veces y la primera vez era una adolescente y la segunda vez fue hace 5 años que estudie para Maestro Culinario, y la verdad que todo lo que se lo aprendí desde mi adolescencia conserve ese registro de sabores de la primera vez que lo estudie, mis profesores realmente sabían que significaba la química de los alimentos y me enseñaron varias técnicas, voy a tratar de transmitírselas a través de cada pagina o historia que les cuente sobre mi cocina y mis platos preferidos.

No les voy hablar de los procesos químicos sino de la armonía de sabores, la unión entre dos o mas ingrediente aunque sean opuestos, pues al combinarse en la cantidad adecuada hacen un proceso químico que tu paladar agradece y que te hace exclamar Hum mm, ¡Que Ricooo¡

Hablemos un poco de las especias, según wikipedia (cito textualmente) se considera una especia a las partes duras, como semillas o cortezas, de ciertas plantas aromáticas, pero por similitud, muchas veces también se engloba a las fragantes hojas de algunas plantas herbáceas, cuyo nombre culinario es hierbas. La mayoría de las especias pueden considerarse nativas de las regiones tropicales de asía, y de las islas Molucas en en Indonesia, también conocidas como Islas de las Especias, aunque algunas se encontraban en el mediterráneo tales como el anís, mostaza.
Actualmente usamos las mismas especias que se usaban en la antigüedad.

There are foods that have a very mild flavor, which is why they require a seasoning that enhances it, such as chayote, for this reason it is important to know the most used species because they are the ones that you are going to get in the market, here in Venezuela you can get many spices since we have several communities that use them a lot, which guarantees their distribution in local markets.

In the kitchen it is important to know how to use spices, since depending on the dish you are going to prepare, you must know which spices to use.
I have as a rule not to use more than 2 or 3 spices in the same dish

Hay alimentos que tienen un sabor muy suave por lo que ameritan un condimento que lo potencie, como por ejemplo la chayote, por eso es importante conocer las especies mas utilizadas porque son las que vas a conseguir en el mercado, acá en Venezuela se consiguen muchas especias ya que tenemos varias comunidades que las utilizan mucho, lo que garantiza su distribución en los mercados locales.
En la cocina es importante saber usar las especias, ya que dependiendo del plato que vas a elaborar debes saber cuales son las especias a utilizar.
Tengo como regla no utilizar mas de 2 o 3 especias en un mismo plato.

Basil:
This herb gives us a lot of fragrance which aromatizes our meals, my experience with this herb has been very good when I prepare pasta sauces, vegetable stew and vegetable soup I combine it in equal parts with oregano and it enhances the flavors of the vegetables and broths.
Generally in my experience it combines with garlic, rosemary, thyme and oregano.

Turmeric:
I use it for rice because it gives me color and has medicinal properties.
It can be combined with cardamom, garlic powder, cumin, anise.

Oregano:
When I want a particular flavor I combine it with thyme to cook meats, that gives me a lot of flavor. and as I said before with basil for the sauces.
Its flavor can be combined with cayenne, paprika or paprika, turmeric, ginger, oregano and cinnamon.

Laurel:
This spice must be very careful when combining it with another that is not compatible with it, it can turn the taste of the food into bitter and diminishes the flavors, I never combine it with Spanish celery, it leaves an unpleasant taste in my opinion.
It can be combined with oregano, thyme and sage.

Thyme
I generally use it to flavor certain grains such as white beans, pink beans, yellow peas and I only combine it with oregano, rosemary.

Coriander seeds (Coriander)
I really like this spice to combine its flavor with capers, poultry or vegetable stews are really a delight.
I usually combine it with thyme or garlic, capers, chili pepper, cumin and cinnamon.

Black pepper:
For me it is the queen of spices since there is no preparation to which it is not added, I even use it in sweets, that is, it combines with everything.

Rosemary
I use this spice for the pork, combined with the mustard it gives the pork a lot of flavor.

Boil Good or Mint
I use it a lot to enhance the flavor of lentils, it gives it aroma, its flavor combines well with the flavor of lentils.
I also use it in soups and add coriander, a very delicious combination.

Albahaca:
Esta hierva nos aporta mucha fragancia la cual aromatiza nuestras comidas, mi experiencia con esta hierva ha sido muy buena cuando preparo salsas para pastas, guiso de vegetales y sopa de verduras la combino en partes iguales con el orégano y me realza los sabores de las verduras y caldos.
Generalmente en mi experiencia combina con ajo, romero, tomillo y orégano.

Cúrcuma:
La utilizo para el arroz porque me aporta color y tiene propiedades medicinales.
Se puede combinar con cardamomo, ajo en polvo, comino, anís.

Orégano:
Cuando quiero un sabor en particular lo combino con el tomillo para guisar carnes, eso me aporta mucho sabor. y como ya dije antes con albahaca para las salsas.
Su sabor se puede combinar cayena, pimentón o paprika, cúrcuma, jengibre, orégano y canela.

Laurel:
Esta especia se debe tener mucho cuidado al combinarla con otra que no sea compatible con ella, puede convertir el sabor del alimento en amargo y disminuye los sabores, nunca lo combino con apio España, deje un sabor desagradable a mi parecer.
Se puede combinar con orégano,tomillo y sabia.

Tomillo:
lo uso generalmente para dar gusto a ciertos granos como las caraotas blancas, rosadas, arvejas amarillas y solo lo combino con orégano, romero.

Semillas de Cilantro:
esta especia me gusta mucho combinar su sabor con alcaparras, los guisos de carnes de aves o verduras realmente son una delicia.
Lo suelo combinar con tomillo o ajo, alcaparras, guindilla, comino y canela.

Pimienta Negra:
Para mi es la reina de las especias ya que no hay una preparación a la cual no se la agregue, la uso incluso en dulces o sea combina con todo.

Romero:
Esta especia la uso para el cerdo, combinada con la mostaza le aporta mucho sabor al cerdo.
Combina con con ajo, orégano, tomillo
.
Hierbabuena o Menta:
La uso mucho para realzar el sabor de las lentejas le aporta aroma, su sabor combina bien con el sabor de las lentejas.
También la uso en sopas y añado cilantro muy deliciosa combinación.
.
Espero que experimenten con las especias, este pequeño resumen que les estoy dando es solo un guía para que ustedes se animen a combinar y probar con las especias que estén en sus alacenas y realicen sus propias recetas.
