Tabbouleh - Recipe

Good Stemians today I will present a salad from Syria and Lebanon that is sometimes used as an accompaniment to the set of typical snacks in the area. It is a cold dish consumed in the hot summer months throughout the Arab world.

Ingredients:

  • 200 grams of wheat.
  • 4 onions preferably large and white.
  • 4 very ripe tomatoes.
  • 4 tablespoons of oil, if it is better olive.
  • 1 large lemon and plenty of juice.
  • Salt and pepper to taste.
  • Mint and good grass or parsley.
     

Preparation:

  • Place the wheat in a deep bowl and moisten with slightly salted water.
  • Peel the tomatoes and cut them in Brumois, preserving their juice.
  • Peel and finely chop the onions.
  • Mix all the ingredients with the wheat and add the oil, salt, pepper, mint and lemon juice.
  • Before serving, place in the refrigerator for 2 hours, stirring occasionally.
