APPLE CINNAMON CREPES

Ingredients
🌾 1 ½ cups gluten-free oat flour, certified GF
🌿 ¼ cup tapioca flour or cornstarch
🍬 1 tbsp brown sugar
🍂 1 tsp ground cinnamon
🥄 ½ tsp baking powder
🧂 ¼ tsp salt
🥛 2 cups unsweetened plant-based almond milk
🍀 1 tbsp melted vegan butter or coconut oil
🌼 1 tsp vanilla extract
🧈 Oil or vegan butter for cooking the crepes
🍏 3 medium apples, peeled, cored, and diced
🍁 2 tbsp maple syrup
🍋 1 tbsp lemon juice
🍂 1 tsp ground cinnamon
🌱 ½ tsp ground ginger, optional
🍄 ¼ tsp ground nutmeg, optional
💧 Pinch of salt
🍀 Vegan butter/oil for sautéing
🥥 ½ cup full-fat coconut milk, from a can
🍬 ¼ cup brown sugar
🍁 2 tbsp maple syrup
🌼 1 tsp vanilla extract
🧂 Pinch of sea salt
Instructions
1- Prepare Crepe Batter:

In a large mixing bowl, combine the dry ingredients: gluten-free oat flour, tapioca flour, brown sugar, ground cinnamon, baking powder, and salt.

In a separate measuring cup, whisk together the almond milk, melted vegan butter, and vanilla extract.

Gradually add the wet ingredients to the dry mixture, whisking until smooth. Let the batter rest for 10 minutes.
2- Cook Crepes:

Heat a flat griddle or crepe pan over medium heat and lightly grease with oil or vegan butter.

Pour approximately ¼ cup of batter onto the hot pan and swirl to create a thin, even layer.

Cook for 2-3 minutes on each side until golden brown. Transfer to a plate and repeat with the remaining batter.
3- Prepare Apple Cinnamon Filling:

In a frying pan, sauté diced apples in vegan butter or oil until slightly softened.

Add maple syrup, lemon juice, ground cinnamon, and optional ginger and nutmeg, with a pinch of salt. Cook until apples are tender and coated in syrup.
4- Prepare Salted Caramel Sauce:

In a small saucepan, combine coconut milk, brown sugar, and maple syrup. Simmer over medium heat for 10-15 minutes, stirring until thickened.

Stir in vanilla extract and sea salt, then let cool slightly.
5- Assemble and Serve:

Spoon apple cinnamon filling onto each crepe, roll up, and stack on a serving plate.
