Mmm, this looks good! I've had falafels at restaurants and the homemade ones always come out dry and not moist inside. I've been tempted to add something like zucchini so some moisture is trapped inside.
These had grated carrot, Bell peppers, sweetcorn, onion and fresh parsley in. They were definitely moist with all the added veggies.
