Slow Cooker Recipe (Marrowbone)

Today we go to visit Verona and surroundings, so I got up a bit earlier this morning and for dinner tonight I thought to prepare something with the slow cooker so when we get back home everything is almost ready. I decided to prepare dinner with marrowbone.

These are the ingredients:
• Marrowbones
• Carrots
• Onion
• Celery
• Prunes
• Lemon zest
• Rosemary
• Sage
• Garlic grass (or garlic)
• Salt and pepper

Cut the carrot, celery, onion, and prunes into pieces and finely chop the aromatic herbs. Only the grated rind of the lemon will be used.
Put a little olive oil on the bottom of the pot and then a layer of vegetables followed by a marrowbone, a sprinkling of aromatic herbs and lemon zest, a little salt, and pepper. Continue until all the ingredients are all used.

About a glass and a half of red wine (a light wine, not aged). Add water to cover 3/4 of the ingredients height. Turn on the slow cooker and leave it for 10 to 12 hours. To make the gravy, take out the marrowbones and blend all the remaining liquid and vegetables and add little potato starch to thicken. Bring to a boil in another pot and cook until you reach the density you desire. Then pour the gravy over the marrowbones.
