Pistachio-Crusted Fish
Place albumen during a shallow bowl. mix the pistachios, bread crumbs, parsley, pepper and salt in another shallow bowl. Dip fillets in albumen, then pistachio mixture. Place fish on a baking sheet coated with preparation spray.Cook quinoa per package directions. combine wheaten panko and shredded pistachios with one tablespoon olive oil; sprinkle over fish, pressing gently to stick. Fluff quinoa, then add baby spinach, juice, one tablespoon oil, and 1/4 teaspoon every salt and pepper; toss to mix and serve with fish.
