Meatless Spaghetti home made sauce

This was the first year I tried growing Eggplant. I had two, the regular and a smaller Japanese variety.
They both have been bearing a few in a weekly or less pattern

I've given away a lot, most people don't want them, like me they didn't know what to do with them.
I tried Dried, fried etc... and still they were going bad in my fridge.

I'd seen a recipe on one of the cooking shows I watch.
Cut the Eggplant into one inch cubes, drizzle with olive oil, spread out on paper towel (I used unbleached coffee filters) and put in the microwave just to dry them out some.
Take that out, let cool, then sautee in more olive oil.
I added my own homegrown Basil, Oregano and some diced banana peppers. and one can of Cento Italian crushed tomatoes.
After a while, I cooked one bundle (one serving) of Japanese Udon Noodles

That was some of the best eatin' I've had in a while.

Today my daddy would have been 112 yrs old

Thank you @sirenahippie and @foodiesunite
Yum! That does, indeed, look like some good eatin' 😋
I like your clever trick of drying the eggplant a bit in the microwave! Excellent idea! ✌️
Homemade spaghetti always hits different! 🍝❤️ I love how simple and delicious this meatless sauce looks. Perfect for a cozy and satisfying meal!
Sounds like a nice meal Jerry. Very cool how you prepped the eggplant too.
I love eggplants—they're a water-rich, highly nutritious, and versatile food. It's great that you grew them at home and made your own sauce. What a treat! I hope you can get more people to give eggplants a try!
Glad you found a good recipe with which to use up some of that eggplant crop. I have too much zucchini this year, but I found out the local food bank will take my extras. You might be able to unload some eggplant that way.
Thank you @eugelys
I'm getting by, sharing with family and friends, but I have had some go bad in my fridge
