Wednesday Yellow - Lemon curd

I had 3 lemons to use up this weekend, so I made a jar of lemon curd. The ingredients are so simple - lemons, egg yolks, sugar and butter - and I could easily just sit and eat it all straight out of the jar! It's like a happy little jar of lemony sunshine.
