Hot and Ready

I had almost forgotten about this culinary delicacy and just why it is so prized. However, as I took my first taste it all came flooding back. Like a wave the intense little crunch release a torrent of fresh garlic flavor followed by a build up of more garlic with heat. Simply fabulous and worth the long wait. I will be harvesting scapes all week long and will be making notes to compare differences in the cultivars. Today I sampled the Georgia Crystal scapes and as I am sure you have gathered by now it was a big winner in my books.
