Watermelon Soup
"What could be better on a hot summer day than a cool soup made with fresh watermelon and mint?"

Ingredients
-4 cups cubed seeded watermelon
-2 tablespoons lemon juice
-1 tablespoon chopped fresh mint
-1 tablespoon honey
Directions
-Blend watermelon, lemon juice, mint, and honey in a blender until smooth. Refrigerate 2 hours before serving.
