So this morning i woke up with cravings to eat akara.

This is a conventional food eaten on saturdays,here in nigeria...
Akara (bean cake) a Nigerian food eaten mostly for breakfast, the delicate fried food is made from beans and can also be eaten as a snack.

It is often combined with akamu (corn starch). It is nutritious and delicious. It can be deep fried or pan fried.

This is how i prepare my bean cake,

INGREDIENTS

2 cups of beans (use black eyed peas for best results)

1 small bulb of chopped onions

pepper(ata rodo)......to your taste

Vegetable Oil for frying

Seasoning

Salt

METHOD,

Wash and Soak your beans In a bowl of water.

Wash the beans till the skin has peeled off
Blend the beans with a little water till it forms a paste. (You can also make use of the wet mill)

Pour your paste in a bowl and with a spoon, whisk the paste till the mixture is light and fluffy

Add your seasoning, salt,chopped onions and pepper. (You can choose to blend the pepper and onions)
Heat oil till moderately hot,scoop paste with a spoon and drop immediately.
Fry till golden brown and serve with Bread, Custard,or akamu.
