Tender Meat

I went to an Italian restaurant in my neighborhood the other night. It's been there for seventy-five years. They have a bar in the front which has always been a meeting place for the neighborhood people. Dining is in the back. They have many dishes and some are surely favorites. One of them is their veal chop. Close to two inches thick and quite tender.
