How tea leaves are processed

My recent trip to Lake Toba, Indonesia ........

The freshly harvested tea leaves were left to wither to reduce the moisture content. The temperature, humidity and air flow can be controlled with the machine and it helps to ensure even withering.

The tea leaves are rolled and torn in this machine.

The tea leaves are tossed and dried here.

The tea leaves will be left to ferment and further dried.
