Mexican Style Pesto Jack Potatoes
Im sure as hell that you’ll go crazy eating this loaded potatoes!
This here is a Mexican style jacket potatoes which i've taken to the next level using Living Food Co ‘s Basically Pesto! I'm not sure if they are available abrodas off now but fret not as you can use pretty much any good Pesto brand.
Drizzle the scooped out par boiled potatoes with oil and bake for 20 minutes at 180C until crispy and golden.
For the filling take the potatoes, boiled rajma, corn, onions, pesto, mayo.
Mix it up well and stuff the baked potatoes with it.
Bake for another ten minute and drizzle with some mayo + milk mixture and top with coriander and serve warm! ❤️
