Ingredients

For the Cod Fish:

  • 🐟 2 cod fish fillets
  • 🥑 2 tablespoons avocado oil
  • 🧄 3 cloves garlic, chopped
  • 🌿 1 teaspoon thyme
  • 🌿 1 teaspoon oregano
  • 🌶️ 1/2 teaspoon cayenne pepper
  • 🌶️ 1/2 teaspoon paprika
  • 🧄 1/2 teaspoon garlic powder
  • 🧅 1/2 teaspoon onion powder
  • 🧂 1 teaspoon citrus seafood seasoning (or Old Bay seasoning)
  • 🍋 1 fresh lemon, sliced and juiced
    For the Cauliflower Rice:
  • 🥑 2 tablespoons avocado oil (or olive oil)
  • 🧄 2 cloves garlic, chopped
  • 🥦 1 package cauliflower rice (stir fry or regular)
  • 🌿 2 tablespoons cilantro, chopped
    For the Asparagus:
  • 🌱 1 bunch asparagus
  • 🧂 Salt to taste
  • 🧂 Black pepper to taste

Instructions

  1. Prepare the Cod Fish:
    • Preheat your oven to 350°F (175°C).
    • In a small bowl, mix avocado oil, chopped garlic, thyme, oregano, cayenne, paprika, garlic powder, onion powder, and citrus seafood seasoning.
    • Coat the cod fillets thoroughly with this mixture, ensuring they are evenly covered.
    • Place sliced lemons on the bottom of an oven-safe pan and place the seasoned cod fillets on top.
    • Squeeze fresh lemon juice over the fish.
    • Bake in the oven for approximately 30 minutes, or until the fish is cooked through and flakes easily with a fork. Cooking time may vary based on the thickness of the fillets.
  2. Prepare the Cilantro Cauliflower Rice:
    • In a large skillet, heat avocado oil over medium heat.
    • Add the chopped garlic and sauté until fragrant.
    • Add the cauliflower rice and cook, stirring frequently, until tender, about 5-7 minutes.
    • Stir in chopped cilantro and mix well.
  3. Prepare the Asparagus:
    • Trim the ends of the asparagus and season with salt and black pepper.
    • In a separate pan, lightly sauté the asparagus over medium heat for about 5 minutes, or until just tender but still crisp.
  4. Serve:
    • Plate the baked cod on a bed of cilantro cauliflower rice, with asparagus on the side.
    • Garnish with any remaining lemon slices or cilantro if desired.
