Preparing Potato Leek Soup for my sick Mum

Leeks, carrots, roasted garlic, thyme, a little coconut sugar, and lots of butter! I used yellow potatoes and boiled them in a nice vegetable broth until soft, then pureed. I stirred in the sautéed veg afterward. Tasted it 40 times or more for seasoning. Topped with a sprinkle of cheese and POW! The soup turned out well, my Mum praised it. This post was supposed to be a solo pic on Steepshot but someone it got messed up so I added the rest of the pics!
