High Protein Vegetable Stew

It's the first cold day. In celebration I made a hearty warm strew. :)

• 4 celery stalks
• 1 onion
• 1 carrot
• 1 green bell pepper
• 4 potatoes
• 2 1/2 cups mixed beans soaked overnight
• Tri-colored quinoa
• 4 garlic cloves
• 2 cups of water
• 1 box veggie broth
• 2 bay leaves
• creole seasoning, garlic salt, dash of cayenne pepper
• 1 bunch of kale added at the end
• green onions on top
